Food Processor Vegetable Loaf-

1 medium washed zucchini, shredded in food processor 1 large carrot, shredded in foor processor 2 stalks of celery, shredded in foor processor On small onion, finely chopped in Food processor. Set these veggies in a microwave-proof bowl, ad a teeny bit of water and olive oil and cover. Microwave for 3 minutes. Drain and set aside. Shred a soft bun or slice of bread and add to the veggies. 2 envelopes of instant oatmeal. Add to veggies. Puree a drained can of chick peas and add to the veggie mix. Add 1 heaping tablespoon of almond butter Add salt and a few pinches of red pepper flakes. Mix all well with your hands. Place in an oiled loaf pan and bake at 350 degrees for 45 minutes. Let cool for 30 minutes to an hour. Serve with noodles, potatoes and some instant gravy. Tastes great cold the next day in sandwiches.
