Five-Minute Corn Bread-

 How about some Five-Minute Microwave Cornbread?

1 cup yellow cornmeal

1 cup flour (can use rive flour for gluten-free)

3 teaspoons baking soda

1/4 teaspoon salt

2 tablespoons sugar (optional)

1 cup milk (plant-based OK too.)

1 egg white (use 1 individual serving of apple sauce if vegan)

2 tablespoons butter, melted (use oil if vegan)

Mix dry ingredients together, then add the remaining ones. Mix together until blended. Grease a microwave-proof pie pan and spoon mixture into it. Cook for 5 minutes. Insert a toothpick to check if done. If it comes out clean, it's ready. If not, cook for another 30 more seconds or so as microwaves vary.

Enjoy as breakfast or as a side to chili.
